400 g salmon fillets without skin
1 organic lemon rind
10 ml white vinegar
1/2 tablespoon extra virgin olive oil
1 clove of minced garlic
qb pink pepper
salt to taste
Remove any remaining skin from the salmon fillets, then cut it into cubes of the same thickness.
Shape the salmon skewers, put them in a glass dish, pour them in oil and white vinegar, then sprinkle them with pink pepper, minced garlic, lemon rind and a pinch of salt: leave them to rest in the fridge, covered with plastic wrap, to about an hour.
Then cook the salmon skewers with pink pepper on a grill or in a non-stick pan, without adding more fat, turning them on all sides, until they are golden brown. Serve immediately.
