  • 500 g chicken breast
  • 300 ml coconut milk
  • 300 ml tomato sauce
  • 1 tablespoon extra virgin olive oil
  • 1 clovegarlic 
  • 100 g wild rice
  • 100 g basmati rice
  • salt to taste
  • pepper to taste


INSTRUCTIONS

  1. Cut the chicken into pieces and cook it in a ceramic cocotte, or casserole, with a tablespoon of extra virgin olive oil and a clove of garlic. When the chicken is golden, add the coconut milk, the tomato puree. Add salt, pepper and simmer for 30 minutes.
