After deep-frozen foods, you must store your food in the fridge in order of perishability: then take precedence over meat and fish !  
The latter is the most delicate refrigerated food : you must remove the fish from the plastic bag with which it is normally sold and place it inside a glass container that you will have to seal with the transparent film .
If the fish has already been cleaned or gutted, you should not rinse it.

Central part

In the central part you have to place the cold cuts and cheeses .
If the cuts are packaged , then sealed, leave them in their container.
If, on the other hand, you bought them when you cut them, you will have to be careful to wrap the whole package with aluminum (even if the paper you are sold with is the food for sliced ​​meat) as this is the material that best protects food fat from oxidation .
As for the cheeses, the rule is: if you buy them wrapped in transparent film, once at home, remove the film and wrap it with aluminum.
But not all cheeses are the same : if aluminum is good for mature cheeses you should not use it for fresh ones (such as crescenza, mozzarella), which still contain many vital microorganisms.
Fresh cheeses must be kept in a glass container and closed with a lid.
While cheeses that have a very strong odor , such as gorgonzola, if they are packaged, you leave them in their packaging, otherwise you have to keep them in an additional glass container to prevent the whole refrigerator from having the smell of cheese.
In this compartment, milk (and not in the compartments on the door … very common mistake) should also be kept sauces , cooked leftovers and sauces .
Very important : watch out for cross-contamination!
Separate raw foods from cooked or ready ones : in this way you will avoid that microorganisms eventually present in the first ones transfer to food.

Tall compartment

It’s time for the eggs : it would be natural to put them in the container already set up on the refrigerator door.
Instead, in addition to being the area where the temperature is higher, it is also the place most subject to temperature fluctuations (due to the opening and closing of the door).
On the shell of the eggs, one could thus form a harmful condensate … that’s why we find them at the supermarket at room temperature!
Then the eggs should be left in their container and placed in the top compartment so that it is easier to keep the expiration date under control.
In this compartment, you will also have to put yogurt , cream-based desserts or cream and butter .

Fruit and vegetable compartment

The vegetables should be placed in the lower drawers.
But you must take care to put on the base of the drawers of kitchen paper .
At this point the vegetables can be kept loose, without any type of envelope.
It’s fruit time : if you bought berries , or strawberries , blackberries in plastic trays, you can put them in their packaging in the top compartment.
Instead, fruit like apples , you have to place it in the private drawer of the plastic to let it breathe.

Front office

The doors are the least cold part of the fridge .
On shelves mounted on the door you will need to store products that need light refrigeration: drinks , wine, water, beer and  sauces  (mayonnaise, ketchup, mustard …).

Refrigerator cleaning
